Timfish's All-Purpose Breading Timfish's All-Purpose Breading Basic Recipe
  • Beat 4 or more eggs in a large bowl.
  • Put Timfish's All-Purpose Breading into an 8 X 10 cake pan.
  • Add the fish, chops, chicken or whatever . . . to the beaten eggs.
  • One at a time (allowing the extra egg to drip off) add the food of your choice to the breading, covering all sides well while pressing firmly to ensure good coverage and adhesion, then lay them on a cookie sheet.
  • After all the pieces are breaded, heat the oil to 350 degrees and start frying!
  • Frying can be done in a cast iron skillet with about 1/2” of oil and turn once, or deep fat fry.

Timfish Hamburgers
2 lbs. ground beef
1/4 to 1/2 cup Timfish's All-Purpose Breading
1/2 cup finely diced onion
1 T. Worcestershire Sauce
 
Knead all ingredients together, patty to desired size, fry or grill.
Fried Vegetables
Timfish Potatoes
Cut whole potatoes (with or without skin) into cubes or quarters.
Add the potato pieces to an egg wash (3 or 4 eggs beaten in a large bowl) then bread them in Timfish's All-Purpose Breading and bake or deep fat fry.

 

Jalapeño Poppers    NEW!
8 - 10 jalapeño peppers cut in half lengthways and deseeded
8 oz. soft cream cheese
6 - 8 slices cooked bacon, crumbled
4 eggs, well beaten
1/2 cup flour
Timfish's All-Purpose Breading
 
Mix bacon and cream cheese together, then fill pepper halves level full. Flour all halves well, then dip in the egg and bread with Timfish's All-Purpose Breading. When finished, egg and bread again without the flour. Deep fat fry or fry in cast iron skillet with 1/2" oil until golden brown on both sides.

Fried Mashed Potatoes     NEW!
Add 2 beaten eggs to 4 cups cold mashed potatoes (made fresh or left over). Mix well, then make into hamburger size patties. Salt and pepper to taste. Bread with Timfish's All-Purpose Breading (without using an egg wash). Pan fry with a little oil until golden brown on both sides.
Bernie's Meat Loaf & Topping
3 lbs. ground chuck
2 eggs
1 to 2 cups Timfish's All-Purpose Breading
3/4 cup ketchup
1 package Knorr Onion Soup Mix, or equivalent
2 T. sage
2 T. Worcestershire Sauce
Mix all the above ingredients, shape into a loaf, and bake 1 hour 15 minutes at 350°.
 
Mix the following topping ingredients:
3 T. brown sugar
1/4 tsp. nutmeg
1 tsp. dried mustard
1/4 cup ketchup
Spread topping over loaf and return to oven for an additional 15 minutes.
Breaded Chops and Cutlets
Pork Chops or Pork Cutlets
1/4 cup flour
2 eggs
Timfish's All-Purpose Breading
4 pork chops or cutlets
 
Flour both sides of chops or cutlets, dip into beaten eggs, then into the breading, covering all sides well and firm to ensure good adhesion. Fry in oiled skillet on both sides until crispy brown, then finish in oven at 350° for 30 to 45 minutes or until done.
Bubba's Dried Beef and Garlic Pork Rolls
“A Must Try”
8 slices dried beef
8 pork loin chops cut 1/2” thick, pounded thin in rectangles
3 T. minced garlic
3 T. minced parsley
2 large eggs
2 to 3 cups Timfish's All-Purpose Breading
Vegetable oil for frying
 
Lay dried beef on top of pounded pork loin chops. In a small bowl, combine the garlic and parsley. In a shallow bowl, beat the eggs to make an egg wash. In another shallow bowl, put Timfish's All-Purpose Breading. In a large saute pan, heat enough oil to come up the sides 1/2”. Sprinkle the dried beef/chop with garlic-parsley mixture and roll each one up tightly and secure with toothpicks. One at a time, dip the rolled chops in the egg, then add them to the breading and coat well. Add to hot oil in batches and cook, turning until brown on all sides. Remove and drain on paper towels. Lightly season with salt and pepper. Top with your favorite sauce if desired.
